I like Jalapeno Jack, Camembert, and Blue Cheese.

if you like white cheddar, you should try Wensleydale. my favorite cheese, bar none. crumbly and honeyish. great with crackers (biscuits) and fruit.
y-fenni is also nice (that's the welsh word for abergavenny, the town of origin). on cheese.com, it's called Red Dragon, i suppose, because there's a hotel called the Dragon Inn in Abergavenny, which has been a hotel for several hundred years. spicy. excellent with bread and ale.
i may just place an order right now!
